The ingredients that go into my cakes are extremely important to me. I aim to buy the most local, fresh, seasonal, sustainable and ethically produced ingredients possible. Of course, being located in the South West of Ireland does not allow for the cultivation of some ingredients but where it is possible to buy local I do. This philosophy guarantees that the cakes I produce are packed with real flavour.

All cakes are finished with a ganache as the final coat or as an undercoat for fondant to allow sharp edges to be achieved.

Only natural ingredients are used in my kitchen. There are no artificial colours, flavours or preservatives in my recipes.

Bord Bia Approved Free Range Eggs
Clóna Irish milk and buttermilk
Callebaut chocolate and cocoa powder
Homemade buttercreams, syrups, curds, caramels and pralines.

Please be aware that all cakes contain wheat (gluten), eggs and dairy. Some cakes include nuts and have ingredients which may contain soya. All cakes on order will be provided with an allergen list at collection/delivery.
